Why it worksThis classic Dutch lunch works at any time of day. Frying the eggs in the bacon fat ties the flavours together.

Ingredients

Method

  1. Fry the bacon in a frying pan on medium heat for 4–5 minutes, until crispy. Put it on a plate and leave the fat in the pan.
  2. Butter the bread and put it on the plates. Put the cheese on top.
  3. Fry the eggs in the bacon fat on medium-low heat for 3–4 minutes, until the whites are firm but the yolks are still soft.
  4. Put 2 eggs on each plate of bread. Add the bacon and slices of tomato. Add pepper but no salt, because the bacon and cheese are already salty.

A portion: about 900 kcal · 41 g protein · 62 g carbs · 52 g fat

Cook eggs until the yolk is firm if this is for a child under 5, someone pregnant, an older person, or anyone with weak immunity.
