Why it worksThis is the best use for bread that is going stale. Dry bread soaks up the egg and milk better than fresh bread.
Ingredients
- 400 g bread
- 5 eggs
- 400 ml semi-skimmed milk
- 150 g grated gouda
- 250 g onions
- 15 g mustard
- 20 g butter
Method
- Slice the onions. Melt most of the butter in a frying pan on low heat. Cook the onions for 15 minutes, stirring now and then, until soft and golden.
- Rub the rest of the butter inside an oven dish. Tear the bread into pieces and put them in the dish. Add the onions and most of the cheese.
- Beat the eggs with the milk, the mustard and a pinch of salt. Pour it over the bread and press the bread down so it soaks up the liquid. Leave it for 10 minutes and heat the oven to 180 °C (fan oven 160 °C).
- Sprinkle the rest of the cheese on top. Bake for 35 minutes, until puffed up, firm in the middle and crispy on top.
