Surinamese peanut soup

Why it worksMix the peanut butter with hot soup in a bowl first. If you add it straight to the pot, it forms lumps.

Method

  1. Put the drumsticks, the chopped onion and garlic and the stock cubes in a large pot with 1.5 litres of water. Let it bubble gently for 25 minutes, until the meat comes away from the bone.
  2. Lift out the chicken. Pull the meat off the bones, put the meat back in the pot and put the bones in the bin.
  3. Cut the sweet potato into 2 cm cubes. Add it to the pot and cook for 10 minutes, until soft. Start cooking the rice as the packet says.
  4. Put the peanut butter in a bowl and slowly stir in 200 ml of the hot soup until smooth. Pour it into the pot with the sambal and let it bubble gently for 5 minutes.
  5. Serve the soup over the rice.
