Method

  1. Heat the oil in a wide pot with a lid on medium-high heat. Fry the drumsticks for 8 minutes, turning them, until brown. Put them on a plate.
  2. Chop the onion and garlic and cook them in the same pot for 3 minutes. Add the tomato purée and curry powder and stir for 2 minutes.
  3. Put the drumsticks back. Add 650 ml of water and crumble in the stock cubes. Put the lid on and let it bubble gently for 15 minutes. The chicken needs longer than the rice.
  4. Stir the rice and the drained white beans in around the chicken. Put the lid on and cook on the lowest heat for 20 minutes.
  5. Turn off the heat and leave the lid on for 10 minutes. Cut into the thickest drumstick to check there is no pink meat near the bone.
