Why it worksEggs are the cheapest protein that still feels like a real dinner. Here, 4 eggs and a tin of tomatoes feed 2 people.
Ingredients
- 4 eggs
- 320 g bell pepper
- 150 g onions
- 10 g garlic
- 400 g chopped tomatoes
- 4 g ground cumin
- 3 g paprika
- 20 ml sunflower oil
- 200 g bread
Method
- Slice the peppers and onion thinly. Heat the oil in a frying pan with a lid on medium heat. Cook them for 10 minutes, until very soft.
- Add the chopped garlic, cumin and paprika and stir for 1 minute. Add the chopped tomatoes and a pinch of salt.
- Let it bubble gently for 10 minutes, until thick. When you pull a spoon through the sauce, it should leave a clear line.
- Make four small holes in the sauce with a spoon. Crack an egg into each hole.
- Put the lid on and cook on low heat for 5–6 minutes, until the egg whites are firm. Eat from the pan with bread.
