Why it worksIn the oven the eggs cook from all sides, so they set evenly without a lid and nothing burns on the bottom.

Method

  1. Heat the oven to 200 °C (fan oven 180 °C). Slice the peppers and onion. Mix them in a large oven dish with the olive oil, cumin, paprika and a pinch of salt.
  2. Roast for 20 minutes, until soft with some brown edges.
  3. Stir in the chopped tomatoes and the chopped garlic. Bake for 15 minutes, until the sauce is thick.
  4. Make six small holes in the sauce with a spoon. Crack an egg into each one and crumble the feta around them.
  5. Bake for 8–12 minutes, until the egg whites are firm. Eat with bread.
