Why it worksDrain the potatoes very well. Wet potato makes a sticky paste instead of fluffy mash.

Method

  1. Peel the potatoes and cut them into chunks. Boil them in salted water for 20 minutes. Slice the cabbage very thinly and add it to the pot for the last 5 minutes.
  2. Meanwhile, fry the bacon in a frying pan on medium heat for 5 minutes, until crispy. Add the sliced onion and cook for 5 more minutes, until soft. Keep the fat in the pan.
  3. Drain the potatoes and cabbage very well and put them back in the dry pot. Add the milk, butter and mustard and mash.
  4. Stir in the bacon, the onion and the fat from the pan. Taste and add pepper.
