Why it worksFrying cooked pasta for a few minutes gives it crispy edges. That is what turns leftover pasta into a new dinner.

Ingredients

Method

  1. Cook the pasta in salted water as the packet says. Add the frozen peas for the last 3 minutes, then drain.
  2. Meanwhile, cut the bacon into small pieces and chop the onion. Fry them in a large frying pan on medium heat for 6 minutes, until the bacon is golden.
  3. Add the pasta and peas to the pan and fry for 5 minutes, stirring now and then, until some of the pasta is crispy at the edges.
  4. Beat the four eggs with a pinch of salt and pour them over the pasta. Stir for 2 minutes, until the eggs are set. Scatter over the cheese and serve.
