Spinach dal

Why it worksThe fried onion and spice oil poured on at the end is called a tarka. It turns plain lentils into dal.

  1. Rinse the red lentils in a bowl of water and pour the water away. Put the lentils in a pot with the turmeric and 900 ml of water. Let them bubble gently for 20 minutes, until soft. Scoop off any foam.
  2. Start cooking the rice as the packet says. Slice the onion and chop the garlic.
  3. Heat the oil in a frying pan on medium heat. Fry the onion for 8–10 minutes, until dark golden. Add the garlic, cumin and chilli flakes and stir for 1 minute.
  4. Stir the frozen spinach into the lentils until it melts. Pour the onion and spice oil over the dal and stir once. Taste, add salt, and serve with the rice.
