Why it worksRed lentils are the cheapest good protein in the shop. They need no soaking and cook faster than the rice.

Method

  1. Chop the onion and garlic finely and grate the carrot. Heat the oil in a large pot on medium heat. Cook the vegetables for 5 minutes, until soft.
  2. Add the cumin and paprika and stir for 30 seconds. Add the red lentils, the tin of chopped tomatoes and 700 ml of water.
  3. Start cooking the rice as the packet says. Let the dal bubble gently for 20 minutes, stirring now and then, until the lentils fall apart and the sauce is thick.
  4. Taste and add salt. Lentils need more salt than you expect. Serve on the rice.
