Why it worksTinned beans mashed in a pan with a little water are refried beans. They cost much less than buying them ready-made.
Ingredients
- 300 g white rice
- 800 g kidney beans
- 150 g onions
- 12 g garlic
- 5 g ground cumin
- 250 g tomatoes
- 1 lemon
- 300 g sweetcorn
- 20 ml sunflower oil
Method
- Start cooking the rice as the packet says. Chop the onion and garlic. Keep a spoonful of the raw onion for the salsa.
- Heat the oil in a frying pan on medium heat. Cook the onion and garlic with the cumin for 4 minutes. Add the drained kidney beans and 100 ml of water. Cook for 5 minutes, mashing the beans into a rough paste.
- Chop the tomatoes into small pieces. Mix them with the raw onion, the lemon juice and a pinch of salt. This is your salsa.
- Push the beans to one side of the pan. Warm the drained sweetcorn next to them for 2 minutes.
- Fill the bowls with rice, mashed beans and sweetcorn. Put the salsa on top.
