Method

  1. Beat the eggs with the milk and a pinch of salt in a large microwave-safe bowl.
  2. Microwave on full power for 1 minute, then stir. Microwave again for 30 seconds at a time, stirring after each, until the eggs are set with no liquid left. This takes about 2 minutes in total.
  3. Stir in the cheese and sliced spring onions. Warm the wraps in the microwave for 20 seconds. Fill them with the eggs and chopped tomato and roll them up.
