Why it worksGreeks cook vegetables slowly in olive oil and tomato until the juices become the sauce. Frozen green beans are perfect, because they are meant to end up soft.

Ingredients

Method

  1. Slice the onion and garlic. Cut the potatoes into chunks. Heat half the olive oil in a large pot on medium heat and cook the onion and garlic for 5 minutes.
  2. Add the frozen green beans, the potatoes, the passata, the oregano and 400 ml of water. Put the lid on and let it bubble gently for 35 minutes, stirring now and then, until the potatoes are soft.
  3. Turn off the heat and stir in the rest of the olive oil. Taste and add salt. Serve with the feta crumbled on top and bread.
