Ingredients
- 250 g plain flour
- 500 ml semi-skimmed milk
- 4 eggs
- 200 g bacon
- 20 ml sunflower oil
- 500 g apples
- 20 g sugar
Method
- Whisk the flour, the milk, the four eggs and a pinch of salt in a bowl until smooth. Leave the batter for 10 minutes.
- Meanwhile, peel and chop the apples. Put them in a small pan with the sugar and 3 tablespoons of water. Put a lid on and cook on low heat for 10 minutes, until soft, then mash them with a fork.
- Cut the bacon into small pieces. Heat a little oil in a frying pan on medium heat. Fry a handful of bacon for 2 minutes, then pour in enough batter to thinly cover the bottom of the pan.
- Cook for 2–3 minutes, until the top is set and the bottom is golden. Turn it over and cook for 2 more minutes.
- Keep each pancake warm under a clean tea towel while you make the rest the same way. Serve with the apple sauce.
