Why it worksOats soak up the meat juices while the loaf bakes, so it stays moist and holds together when you slice it.
Ingredients
- 500 g mixed mince (half-om-half)
- 50 g oats
- 1 eggs
- 100 g onions
- 15 g mustard
- 4 g paprika
- 800 g potatoes
- 400 g carrots
- 20 ml sunflower oil
Method
- Heat the oven to 200 °C (fan oven 180 °C). Cut the potatoes into 3 cm chunks and the carrots into thick sticks. Mix them on a large oven tray with the oil and a pinch of salt.
- Grate the onion. Mix it with the mince, the oats, the egg, the mustard, the paprika, a good pinch of salt and some pepper. Shape it into a loaf about 5 cm high and put it in the middle of the tray.
- Bake for 50 minutes, turning the potatoes and carrots halfway, until the loaf is brown. Cut into it: the middle should be steaming hot, with no pink and clear juices.
- Leave the loaf for 5 minutes before you slice it.
